"Chick-fil-a" Chicken 

Prep time: 5 minutes

Cooking time: 15 minutes

Yields: 3



1-2 lbs thinly sliced chicken tenderloins or chicken breast strips (boneless/skinless)

3 TBSP olive oil

Juice of 1/2 a lemon or lime

1 TBSP paprika

1 TBSP garlic

1 tsp salt (optional)

1/4 cup tapioca flour or arrowroot starch

1/2 cup coconut oil ( You need a thick layer in your pan. Coconut oil is best in this case as it withstands high heat. Butter or other oils not recommended for this recipe.)



In a large bowl, combine chicken, olive oil, lemon juice, paprika, garlic, salt and tapioca flour. Toss raw chicken in mixture. 

Heat coconut oil in a stainless steel pan over medium-high heat and add pieces of chicken.

Don’t cook too much chicken at once. You may  need to lower heat when you cook second or third batch. Fry for 3-5 minutes on each side, until no longer pink inside. You don't want really thick pieces or the middle will not want to get done. Transfer to plate and paper towels. Enjoy. :) Just wait til you take the first bite.
