Cinnamon Sugar Bacon Pancakes
4 Tbsp coconut flour
1/4 Tsp baking soda
1/4 Tsp sea salt
1/4 cup coconut cream (cream from a refrigerated can of full fat coconut milk.)
1 1/2 Tbsp local honey
1 Tbsp cinnamon
Cinnamon Sugar Sauce:
1/4 cup organic butter
1/2 cup coconut sugar
2 1/2 tablespoons cream from a can of heavy coconut milk.
Local, Organic Bacon
For the pancakes:
Whisk together the wet ingredients.
Then add dry ingredients and whisk with an electric mixer until well combined.
Heat a pan to just below medium heat and grease with unrefined coconut oil or organic butter.
Pour a pancake size amount of the mix into the pan. Heat on each side until golden brown (about 3-6 minutes).
To make the caramel: Bring the caramel ingredients to a rapid boil over medium heat until the ingredients seem to be well combined, stir occasionally, just until it thickens. Do not overheat.
Top each serving of the pancakes with strips of locally sourced, organic bacon and the caramel. Yum Yum!
