Chicken Fajitas

Here you can choose your favorite wrap. There's not really a healthy choice at a regular grocery store. I like to make mine from plantains, and I think you will love this. It cooks for awhile in the oven,

but you can set a timer and walk away from the stove so you aren't spending that time in the kitchen. You can also choose to order something like Paleo Wraps from online:

But here is the plantain recipe:

2 chopped medium sized green plantains

1/2 cup unrefined (virgin) coconut oil

1 tsp salt

1/4 cup water (as needed)



Chopped tomatoes


Shredded cheese


Chopped, cooked bell peppers


Cooked chicken:

Paprika, salt, pepper, garlic, other favorite seasonings

Cooked chicken breast tenders




Preheat oven to 300.

Melt the coconut oil.

Slice the peel three times long ways on the plantain. This will make it easy to peel.

Chop into 8 or so pieces.

Add pieces to blender with melted coconut oil and salt.

Add the 1/4 cup water if not blending easily (Needed most of the time.) Add a tiny bit more at a time if needed. Don't add too much.

Line a pan or two with parchment paper. I like to use pie plates (for the circle shape.) But you can spread these into the circle wrap shapes in a rectangular pan. They will keep their shape while baking.

Very stable batter.

You have to spread the batter very thin!

Cook at 300 degrees for an 60 - 75 minutes. They will get crunchy like crackers the longer you cook

but will be soft enough for wraps just before getting to that point.


Filling and Chicken:

Cook the bell peppers and chicken with seasonings while the wrap cools. The wrap is best warm also.

Prepare the other filling ingredients like chopping the tomatoes while that cooks.


Put it all together. Great served with rice and re-fried beans. Or choose your favorite sides.
