Pepper Egg Scramble
1/4 cup diced green and red bell peppers
1/4 cup diced onions
1/4 cup diced tomatoes
1/4 Tsp of each: cayenne pepper, paprika, garlic, and salt
(Seasoning ingredients are optional and you can add as much as desired.)
Add oil to pan, preferably coconut. Heat pan to medium heat or just under medium heat. Add veggies. Mix together eggs and seasonings. Move peppers to the side after cooked for 8 minutes or so, and add seasoned egg. Make sure the pan isn't overheated. The egg should cook noticeably but not stick to pan and bubble madly. ;) Cook to desired consistency.
