Sweet Berry Quinoa

 

Prep time: 5 minutes     

Cooking time: According to package instructions. Soaking grains overnight may mean for much faster cooking in the morning though.

Yields: 2 people

 

Ingredients

 Quinoa

 1/4 cup Strawberries

 1/4 cup Blueberries

 2 Tbsp Dried Cranberries

 1-2 Tsp Cinnamon

 2-3 Tbsp Local Honey

 1 Tsp salt

 1 Tbsp butter

Directions

Cook the quinoa according to the package instructions. (You may soak the quinoa overnight to make it more easily digestible.)

Add berries, honey, butter, and cinnamon after cooking. ***You can also add toasted almonds, shredded coconut, or flax seeds, for example.
